precious black winter truffle
This is the so called queen of the French truffles, also known as the Perigord truffle. This variety is produced throughout southern France and in many Italian and Spanish region and recently in Greece. It is by far the most expensive truffle between the black varieties.
It is the most eligible truffle for cultivation.
Joseph Talon, the first official truffle cultivator in Saint-Saturin-les-Apt, France in 1808, has been followed by many others who attempted the same task in similar rocky areas. Huge territories of vineyards which had been destroyed in France were replaced by truffières (truffle fields).
Commercial value: Very high due to the great amount of organoleptic elements, its unique perfume and its multiple gastronomical uses.
