Precious white autumn truffle
T. Magnatum pico is considered to be the truffle enjoying the greatest international recognition, as we can assume by its price. Piedmont – northwestern Italy and more specifically Alba, was the area it was initially originated. Still every year the International Alba White Truffle Fair is being held there. Nowadays significant amounts of white truffle are being harvested in other Italian regions such as Umbria, Tuscany, Molise, Abruzzo, Basilicata etc. Croatia and Slovenia also claim high production of white truffle for over 30 years. Recently this species has been harvested in almost all Balkan territory including Greece.
Despite the efforts for artificial cultivation of this species, it is very difficult to overcome the fact that it takes a really long time to fructify. This the reason why the major part of the available quantity is provided by truffle hunting.
The garlicky sense and buttery texture are of unique excellence and originality.
The flesh of the truffle (gleda) has a characteristic paler hazel to brownish color while the external part (peridio) is smooth and sensible ochre or olive-yellow coloured.
Fructification: September - December
EXTRA-class variant is for truffles that weight 100gr and more per piece. (Extra large truffles)
